SAUVIGNON SANCT VALENTIN

È nel 1989 che nasce il vino bianco più famoso della nostra cantina. Da più di 30 anni il Sauvignon Sanct Valentin beneficia di singole e selezionate parcelle poste sui pendii ai piedi della Mendola, per generare un vino di altissimo profilo. Dal frutto seducente, con eccellente mineralità e persistenza, questo vino è il più importante della linea Sanct Valentin ed uno dei vini bianchi più premiati d’Italia.

Sauvignon Blanc Stella FliederHof

Lo stile francese caratterizza questo vino bianco che si distingue per la sua mineralità, asprezza e precisione.

Le uve provengono da un ripido vigneto nel comune di Caldaro che appartiene alla nostra famiglia dalla vendemmiadel 2020. 

Il suolo di questa area vinicola, che presenta una pendenza fino al 35%, fu plasmato dai ghiacciai durantel’ultima era glaciale. 

In esso è contenuta una percentuale particolarmente elevata di calcare che dona al vino quel suo carattere particolare. Le viti hanno 30 anni

e le loro radici affondano in profondità nel terreno molto permeabile.

Le uve vengono raccolte a metà settembre. Prima di pressarle, vengono lasciate per un breve periodo a contatto

con le bucce, allo scopo ben preciso di estrarne componentiaromatiche. 

La chiarificazione del mosto avviene durante la notte per sedimentazione naturale, dopo di che il mosto fermenta spontaneamente in botti di legno.

Un lungo periodo di affinamento sulle fecce permette al vino di maturare e di trovare la sua armonia.

Il nome “Stella” riflette il carattere di questo vino: deciso, sincero, preciso e luminoso sono attributi che gli si confanno molto bene.

Sauvignon Karolina Nicolussi-Leck

I vitigni del Sauvignon 1917Karolina crescono a 350–400 metri s.l.m., proprio ai piedi delle rovine di 

Castelchiaro, su terreni costituiti da ghiaia, argilla e roccia porfirica che conferiscono all’uva un carattere 

unico e inconfondibile.

Alla vendemmia manuale seguono una breve macerazione e una pigiatura delicata delle uve intere. 

Dopo la successiva sedimentazione naturale e la separazione dei sedimenti, la fermentazione e 

maturazione sulle fecce viene effettuato a temperatura controllata in grandi botti di legno (25%), acciaio 

d´inox (65%) e Tonneau (10%).

Questo Sauvignon è un vino complesso che sprigiona intensi aromi agrumati, sambuco e di frutti esotici. 

Risulta minerale al palato, persistente con un’acidità fresca e vivace e un retrogusto raffinato.
