“La bellezza, la distanza da tutto ciò che noi chiamiamo civiltà, l’assenza di moderne architetture, i profumi che pervadono tutto l’anno queste colline, la vista in profondità, a est di Monticchiello, e Montepulciano, il vulcano preistorico del Monte Amiata a sud, le colline ad anfiteatro che proteggono le Ripi a ovest e a nord. Tutto questo, così meraviglioso, ma anche così incontaminato.”  

Podere le Ripi nasce a Montalcino nel 1984 da un primo innamoramento di Francesco Illy che acquista il podere da un pastore sardo nei pressi di Castelnuovo dell'Abate, versante est di Montalcino. Fu l’amore che solo un fotografo naturalista può avere nei confronti di un paesaggio cosi intenso. Nel 1999 inizia la sua avventura nella viticoltura con i primi impianti e dal 2011 si avvia verso una conversione biodinamica.  

Oggi la tenuta conta circa 31 ettari vitati suddivisi fra i due versanti Montalcinesi, uno ad ovest con terreni alluvionali sabbiosi ricchi di scheletro e l'altro ad est su marne calcaree prive di scheletro; è così che si originano i diversi cinque vini aziendali, ognuno proveniente da singoli appezzamenti, diversi per terroir e per densità. Si parte da impianti da 6.000 viti/ha, fino agli alberelli di Lupi e Sirene da 11.100 viti/ha e al vigneto Bonsai da 62.500 viti/ha (vigneto più denso al mondo).

Tutti i vini subiscono un accompagnamento lento e delicato in cantina, dove grandi tini e botti di legni pregiati sono utilizzati sia per la fermentazione che per gli affinamenti (dai 24 ai 36 mesi a seconda dei vini) per poi terminare con un’armonizzazione in cemento; tutto questo percorso ha come obiettivo quello di esaltare la classicità del Sangiovese a Montalcino e le diverse sfaccettature dei vigneti. Radici profonde, viti in pieno dialogo con ciò che le circonda e la giusta pazienza durante l'invecchiamento sono i requisiti fondamentali per carpire quelle unicità che solo madre natura può creare.
