CLIMA

L’annata 2014 è stata caratterizzata da un inverno umido e mite; oltre alle piogge abbondanti e ben distribuite su tutto il periodo, anche le temperature si sono discostate dalla media storica, senza particolari periodi di freddo. Queste condizioni hanno indotto un consistente anticipo del germogliamento in tutte le varietà, con particolare riferimento al Sangiovese, che ha avviato il suo ciclo vegetativo con più di due settimane di differenza rispetto alle altre annate. La primavera, piuttosto asciutta e mite fino a tutto il mese di Giugno, ha favorito il regolare sviluppo della pianta. L’instabilità climatica tra Luglio ed Agosto ha causato un rallentamento dell’invaiatura e delle prime fasi della maturazione, senza però compromettere la qualità e la sanità delle uve. Le raccolte delle varietà Sangiovese, Merlot e Syrah si sono concentrate nella seconda metà del mese di Settembre.

VINIFICAZIONE

Le uve, raccolte separatamente per varietà, sono state diraspate, pigiate ed introdotte in serbatoi di acciaio inox. La fermentazione alcolica è avvenuta ad una temperatura controllata di 26-28°C, per esaltare l’espressione aromatica e preservare le note fruttate e floreali; la macerazione ha avuto una durata di circa 10 giorni per il Sangiovese e di circa 15 per Merlot e Syrah, ed è stata gestita con interventi meccanici volti all’estrazione di tannini soffici e dolci. Al termine della fermentazione malolattica, avvenuta entro la fine dell’inverno per tutte le varietà, il vino è stato assemblato ed introdotto in legno, dove ha maturato per circa nove mesi in botti grandi di rovere di Slavonia e per una piccola parte in barriques. L’imbottigliamento è avvenuto nei primi mesi del 2016.

DATI STORICI

Pèppoli è stato introdotto nell'anno 1988 con la prima annata 1985 e rappresenta la combinazione di un vino complesso, ben strutturato ma con un carattere fruttato, pieno di aromi. Viene prodotto nella omonima tenuta nel Chianti Classico; a partire dall’annata 2013 parte delle uve viene direttamente vinificata nella nuova cantina Antinori nel Chianti Classico.

NOTE DEGUSTATIVE

Di colore rosso rubino con riflessi violacei, al naso è caratterizzato da intensi aromi floreali e di frutta rossa: le note di viola, ciliegia e lampone ben si uniscono a quelle leggermente fumé date dal periodo di affinamento in legno. Al palato il vino presenta una buona verticalità, tipica del Sangiovese, soffice trama tannica ed ottima sapidità.
