Subito dopo la fermentazione delle uve passite dell’Amarone, la migliore selezione di Valpolicella “ripassa” sulle vinacce dell’Amarone, dando inizio alla seconda breve fermentazione; in questo modo aumenta il tenore alcolico e si ottiene un prodotto più ricco in colore, estratti e aromi.

Dopo un affinamento in tonneaux di rovere francese per 18/20 mesi, segue un successivo riposo in bottiglia per 6 mesi.

Il risultato di questo procedimento è un vino raffinato e concentrato estremamente morbido e vellutato, dai profumi intensi di piccoli frutti rossi.
Il Ripassa offre al palato sentori fruttati e un tannino finissimo, con un’aura di cioccolato e spezie. Rappresenta uno dei vini più significativi dell’evoluzione enoica di Zenato.

Vinificazione:Le   uve   vengono   pigiadiraspate   e   macerate   in fermentino   di   acciaio   inox   per10-12   giorni.   Conclusa   la fermentazione  alcolica,  il  nuovo  vino  viene  separato  dalle  bucce tramite  pressa  soffice  e  conservato  in  serbatoi  di acciaio  fino  al mese  di  gennaio,epoca in cui viene pigiata l’uva appassita per produrre  l’Amarone.A   questo   punto   il   Valpolicella   viene “ripassato” sulle vinacce dell’Amarone con una permanenza di 7-8   giorni   alla   temperatura   di   25-28°C.   Segue   un   periodo   di affinamento di 18 mesi in tonneaux e un affinamento in bottiglia di alcuni mesi in ambienti a temperatura controllata.

Colore:rosso rubino carico. Profumo:intenso, fine e persistente, con sentori di amarena e prugna. Sapore:armonico e vellutato, di buona struttura. Temperatura di servizio:18°CAbbinamenti gastronomici: ottimo compagno con i piatti di selvaggina, le grigliate di carne e gli arrosti, salumi e formaggi stagionati.
