La secolare esperienza di invecchiamento e miscelazione si palesa con chiarezza in questo distillato speziato e unico nel suo genere, la cui storia, al pari di tutte le nostre miscele, è intrisa di vita marinara. A differenza di altri spiriti A.H. Riise, caratterizzati da una tonalità più ambrata e brillante, Black Barrel evoca le sfumature dello sciroppo di melassa: è il risultato di un processo di invecchiamento in botti con interni carbonizzati in profondità.

Un tempo, la carbonizzazione veniva utilizzata per rimuovere le tracce del pesce e della carne salata precedentemente stoccati nei barili. Sembra che siano stati i produttori di cognac francese, nel XV secolo, a intuire come il legno carbonizzato conferisse allo spirito una colorazione più scura e ne cambiasse anche il gusto, instillandovi note più complesse, affumicate e speziate, seppur con un ridotto tenore tannico.
