Vendemmia: manuale
Vinificazione: diraspapigiatura soffice e successiva fermentazione spontanea con lieviti autoctoni in vasche di acciaio inox a temperatura controllata inferiore ai 26 °C. Macerazione di 16 giorni. Durante la macerazione si effettuano rimontaggi o follature in base alla cinetica fermentativa. Fermentazione malolattica spontanea in botti piccole usate durante l’autunno successivo alla vendemmia.
Affinamento: 12 mesi in botti da 25 hl. Prima dell’imbottigliamento, 6 mesi di affinamento in vasche di acciaio inox. Dopo la messa in bottiglia, almeno 12 mesi di ulteriore affinamento prima della commercializzazione.
Colore: colore rosso rubino brillante con riflessi granata
Profumo: intenso, con note di spezie, piccoli frutti di sottobosco maturi e una tipica nota balsamica fresca (pino mugo, salvia e cisto). Chiusura aromatica con un netto sentore di arancia amara
Sapore: fruttato, armonico, fragrante e molto tipico. Elegante e balsamico, con un’acidità che gli fornisce grandi potenzialità di invecchiamento.
