La birra bianca ( Bière Blanche in francese, Witbier in fiammingo) è uno stile di birra originatosi in Belgio che vanta ormai una tradizione di più di 400 anni.

Caratteristiche fondamentali di queste birre sono il loro colore tenue, il corpo esile, un’acidità marcata ed una speziatura che dona note fresche al naso ed in bocca. Sono birre leggere e rinfrescanti, ideali per calmare la sete durante la stagione estiva.

Il loro inusuale colore, giallo tenue che sfuma verso il bianco, deriva dall’utilizzo in miscela di un’elevata percentuale di frumento non maltato che non ha acquistato colore nella fase di essicazione che necessariamente seguirebbe la maltazione. Questo cereale crudo contiene intatti i suoi componenti citolitici e proteolitici originari e non ha purtroppo enzimi. Usato in generosi quantità, superanti il 40 % nella nostra Fiordalisa, richiede particolare attenzione in fase di ammostamento. Ivi solo gli enzimi apportati dal malto dovranno svolgere l’intero lavoro di degradazione delle sostanza di riserva di tutti i cereali utilizzati nella cotta per fornire ai lieviti un mosto avente la caratteristica di dieta bilanciata.

A tal fine, interveniamo sulla qualità dell’acqua fornendogli sali che proteggono e sostengono l’azione degli enzimi e conduciamo una lunghissima infusione per dare loro tutto il tempo per agire. Dopo una lenta separazione del mosto dolce dalle trebbie, durante la bollitura aggiungiamo solo una moderata quantità di luppoli nobili perchè in questa tipologia brassicola il sapore e i profumi del luppolo non devono marcare.
Dopo il raffreddamento, fermentiamo questa birra con un ceppo di lievito di origine belga tipicamente utilizzato per questo stile. Tale svilupperà durante la fermentazione tutto quel mix di profumi che sono caratteristici e rendono speciale la nostra Fiordalisa.

Secondo tradizione, per garantirle longevità, la birra verrà rifermentata in bottiglia o in fusto grazie all’aggiunta di zucchero ed un nuovo dosaggio di lievito.

CARATTERISTICHE ORGANOLETTICHE

Di colore giallo particolarmente leggero presenta abbondantissima e persistente schiuma bianca. Il suo aspetto è decisamente torbido, mette in evidenza l’utilizzo di un’alta percentuale di frumento non maltato.

Al naso colpiscono immediatamente le rinfrescanti note del coriandolo supportate da più ampi profumi d’arancio e spezie. L’aromaticità è intensa e fine.

In bocca la birra è leggera di corpo, secca, ben carbonata e dotata di buona acidità. Con forza le sensazioni retrolfattive persistono e sfociano in un gradevole, fresco ed agrumato retrogusto.
