Not only cognac is produced in the region of the two Charentes: there is another grape product, although almost unknown in Italy, called Pineau (des Charentes): a must to which fermentation is stopped by the addition of alcohol.

The must must come from grapes grown in the two Charentes, and fermentation is stopped by the addition of cognac at 60° when the must reaches 10 degrees alcohol. The result is a fortified must that has an alcohol content of between 16 and 22 degrees.

The origin of this peasant product is lost in time, the result of random mistakes, such as pouring must into a cognac barrel believed to be empty.

Pineau has sweet notes typical of must, but with a sour streak, and a body that is the child of cognac. Aging then gives spicy and woody veins due to the long contact with the barrel, bringing to mind an old fortified wine.

The Très Vieux Pineau appellation undergoes aging for at least 10 years in ex-cognac barrels.
