Dalle Langhe, luoghi nei quali la vite ha trovato una delle sue massime espressioni, provengono le vinacce dei grandi vini del Piemonte DOC – DOCG; la Grappa che ne deriva trova uno straordinario ed emozionante equilibrio derivato dalla concia in fosse sotterranee. La Grappa alla camomilla è ottenuta mediante macerazione diretta di profumatissimi capolini di camomilla delle Langhe in Grappa monovitigno di nebbiolo, secondo una ricetta fortunatamente rinvenuta nei diari di Lidia Levi.

Nebbiolo da Barbaresco DOCG, Dolcetto d’Alba DOC e Barbera d’Alba DOC.

Provenienza e conservazione della vinaccia
Neive, Barbaresco, Trezzo, Treiso ed Alba;  Aree di DOC – DOCG. La vinaccia, scelta per essere fresca ed ancora grondante di mosto, mescolata secondo un’antica ricetta di Serafino Levi, viene subito compressa  in fosse sotterranee al fine di ottenere una concia naturale, in grado di estrarre tutti gli aromi ed i sapori dell’uva.

Caratteristiche dell’alambicco
Alambicco discontinuo in rame, l’unico al mondo, ancora attivo a fuoco diretto per la distillazione della grappa.

Sistema di distillazione
“Grappa distillata da ignari” con metodo discontinuo a fuoco diretto e con vinacce sommerse. Il vapore generato dalla distillazione della vinaccia, arricchitosi delle componenti alcolico-aromatiche, viene condensato con successiva distillazione frazionata della flemma in colonna di rame a 7 piatti.
Questa procedura perfezionata da Romano Levi e a tutt’oggi rigorosamente rispettata, garantisce il perfetto mantenimento di tutte le componenti aromatiche, determinanti per le caratteristiche organolettiche della Grappa.

Data di inserimento nel legno
Immediatamente al momento della distillazione.

Permanenza in legno
Invecchiamento per sei mesi in botti classiche piemontesi da circa 700 litri, in legno di essenze diverse, conservate in  locale con giusta umidità ed a temperatura costante tra 14 e 19 gradi C°.

Macerazione diretta
E’ il sistema migliore per l’immediatezza e la genuinità. Si immergono i capolini di camomilla appena raccolta, in Grappa leggermente invecchiata in legno di gaggia (Acacia).

Certificazione di invecchiamento in legno
Il nostro Mastro Distillatore ed il Controllore, certificano che questa Grappa Riserva  è stata invecchiata in legno,  per il periodo sopra indicato, prima dell’imbottigliamento.
