Unmittelbar nach der Gärung der Amarone-Rosinen "geht die beste Valpolicella-Auslese auf den Amarone-Trester "zurück" und beginnt die zweite kurze Gärung; auf diese Weise erhöht sich der Alkoholgehalt und man erhält ein Produkt, das reicher an Farbe, Extrakten und Aromen ist.

Nach einer 18/20-monatigen Reifung in Tonneaux aus französischer Eiche folgt eine anschließende 6-monatige Ruhezeit in der Flasche.

Das Ergebnis dieses Prozesses ist ein raffinierter und konzentrierter Wein, extrem weich und samtig, mit intensiven Aromen von kleinen roten Früchten.
Die Ripassa bietet dem Gaumen fruchtige Düfte und ein sehr feines Tannin, mit einer Aura von Schokolade und Gewürzen. Er stellt einen der bedeutendsten Weine der enoischen Entwicklung des Zenato dar.

Zu diesem Zeitpunkt wird der Valpolicella wieder auf den Trester des Amarone mit einem Aufenthalt von 7-8 Tagen bei einer Temperatur von 25-28°C "umgefüllt".   Darauf folgt eine 18-monatige Reifung in Tonneaux und einige Monate Flaschenreifung in temperaturkontrollierten Umgebungen.
Farbe:tiefes Rubinrot. Bouquet: intensiv, fein und anhaltend, mit Anklängen an Schwarzkirsche und Pflaume. Geschmack: harmonisch und samtig, mit guter Struktur.
