CABERNET SAUVIGNON TRENTINO SUPERIORE DOC

 Umwelt, Rebe und Mensch haben gleichermaßen zur Entstehung dieses Weins beigetragen.

  

MERKMALE DES WEINBERGS

Saisonaler Verlauf Die Vegetationserholung im Frühjahr war früh, aber der kalte Mai führte zu einer Verzögerung der Blüte von etwa zehn Tagen. Von da an war der Verlauf der Saison sehr günstig mit gut verteilten Niederschlägen. Ab Ferragosto ermöglichten gute Temperaturschwankungen sowie geringe Niederschläge und Feuchtigkeit eine Ernte mit sehr gesunden Trauben, die einen guten Reifegrad und ein gutes Gleichgewicht zwischen Zucker und Säure aufwiesen.

Herkunftsgebiet Ein einziger Weinberg in einem warmen, nach Südosten ausgerichteten Gebiet, wo die Trauben eine optimale Reife erreichen.

Verwendete Rebsorte 100% Cabernet Sauvignon.

Bodenart Mittelgroßer, überwiegend skelettartiger Boden mit hohem Tongehalt und Tendenz zu Kalkstein.

Guyot-Erziehungssystem.

Produktion 70-80 Doppelzentner Trauben pro Hektar.

 

WEINBEREITUNG UND REIFUNG

Weinlese Die Trauben wurden am 15. Oktober sorgfältig von Hand in kleinen Behältern ausgelesen.

Weinbereitung Die Trauben wurden in ca. 200 kg schweren Kisten schnell zur Kellerei transportiert, sofort entrappt und die ganzen Beeren zur alkoholischen Gärung in einen speziellen Stahltank gefüllt. Die alkoholische Gärung erfolgte bei einer Temperatur von ca. 25 °C mit einer Mazeration auf den Schalen von mindestens 12-13 Tagen für alle Sorten in Edelstahltanks.

Ausbau Am 14. Januar 2020, am Ende der malolaktischen Gärung und nach einigen Umfüllungen, wurde der Wein zur Reifung in Barriques und Tonneaux aus überwiegend französischer und neuer Eiche gefüllt.

Reifung in französischer und neuer Eiche. Am 13. Januar 2021, nach einem Jahr der Reifung, wurde der Wein verschnitten. Der Wein wurde am 5. Februar 2021 in Flaschen abgefüllt.

3.222 Flaschen zu 0,75 l und 50 Magnumflaschen. Nach der Abfüllung wird der Wein 24 Monate in der Flasche reifen.

 

ORGANOLEPTISCHE EIGENSCHAFTEN

Aussehen Der Wein hat eine intensive rubinrote Farbe und eine gute Konsistenz.

Nase Die Nase bietet ein intensives und feines Geflecht von aromatischen Nuancen: zunächst Noten von reifen roten Früchten und Gewürzen, dann elegantere Noten von Vanille, Kakaobutter, süßer Schokolade und Kaffee und schließlich eine ziemlich entscheidende mineralische Note.

Geschmack Am Gaumen füllt der Wein den Mund mit Intensität, Ausgewogenheit und Harmonie seiner weichen und harten Komponenten. Er zeichnet sich durch die Ausdauer aus, mit der er seine Aromen und vor allem die in der Nase wahrgenommene mineralische Note freigibt. Er wird sich noch entwickeln, aber er wird auch in der unmittelbaren Zukunft hervorragend sein.
