Unser Barolo ist das Ergebnis einer sorgfältigen Auswahl von Nebbiolo-Trauben aus Weinbergen im Besitz unserer Familie, die sich in verschiedenen Lagen des Barolo-Gebiets befinden: in Serralunga d'Alba (Cascina Ornato, La Serra und Briccolina), in Grinzane Cavour (Gustava und Garretti), in La Morra (Roncaglie), in Novello (Ravera) und, seit der Ernte 2015, in Monforte d'Alba (Mosconi).

Weinbereitung

Aus rostfreiem Stahl. Mazeration auf den Schalen für etwa 30 Tage bei ziemlich hohen Temperaturen.

Alterung

In französischen und slawonischen Eichenfässern für etwa 30 Monate und ein kleiner Teil in Barriques.

Anmerkungen

Ein Barolo im sehr klassischen Stil: Eleganz und Finesse, reife und würzige Frucht, wichtige, aber nicht übermächtige Tannine, gute Struktur und Konzentration. Sehr langlebig.

Unser Barolo ist kein "einfacher" Barolo, sondern seit jeher und gemäß der Tradition der getreueste Ausdruck der verschiedenen großen Terroirs der Barolo-Zone.

"Barolo DOCG Sorano" San Biagio

Rebsorte: Nebbiolo

Geologisches Gebiet: Der Barolo Sorano, dessen erster Jahrgang 2005 ist, stammt von zwei Parzellen im oberen Teil des Ortsteils Sorano in der Gemeinde Serralunga d'Alba, die nach Südosten bzw. Südwesten ausgerichtet sind und zwischen 15 und 25 Jahre alt sind.

Der Boden besteht aus Ton und Kalksteinmergel.

Ernte: Oktober. Der Ernte geht eine sorgfältige Ausdünnung während des gesamten Monats August voraus. Dieser ersten Auswahl folgt eine sorgfältige manuelle Sortierung der Trauben bei der Ernte und im Keller bei der Pressung. Der Ertrag pro Hektar übersteigt nicht 55 q/Ha.

Weinbereitung: Um den Reichtum der Trauben dieses wichtigen Untergebiets optimal zu nutzen, wurde beschlossen, einen strengen Weinbereitungsstil anzuwenden, der in der Lage ist, das einzigartige "Terroir", das dieses Untergebiet zum Ausdruck bringen kann, von den Trauben auf den Wein zu übertragen. Diese Entscheidung hat zur Wiederentdeckung der alten Weinbereitungsmethoden geführt, die in der Vergangenheit angewandt wurden: Die Trauben werden direkt in großen slawonischen Eichenfässern gepresst und 2 Tage lang mazeriert. Anschließend wird die Masse eine Woche lang sanft gepresst, um sie zu homogenisieren. Der Trester wird dann mit dem Wein bedeckt und gärt langsam über 2 Monate lang. Dadurch werden komplexe enzymatisch-fermentative Prozesse in Gang gesetzt, die eine intensive Extraktion der polyphenolischen Bestandteile und ein reiches aromatisches Bouquet gewährleisten.

Reifung: Die Reifung erfolgt am Ende der Weinbereitung in denselben Fässern aus slawonischer Eiche mit einem Fassungsvermögen von 10.000 Litern für etwa 30 Monate. Danach folgt eine weitere 12-monatige Reifung in der Flasche. Während dieser Reifungsphasen entwickeln sich die tertiären Aromen deutlich.

Farbe: leuchtendes, sehr intensives Granatrot, das mit der Zeit zu reiferen Farbtönen neigt.

Bouquet: komplex, mit blumigen Noten, schwarzen Beerenfrüchten - darunter reife Brombeeren. Es folgen würzige Aromen - vor allem Tabak -, Unterholz, Teer: anhaltende tertiäre Aromen, die ins Ätherische tendieren.

Geschmack: Am Gaumen zeigen sich die typischen Eigenschaften der Böden von Serralunga d'Alba. Faszinierend durch seine Geschmacksfülle, seine harmonische Textur und seine balsamischen Noten, die sich gut mit der Süße der Tannine verbinden. Suggestive Noten von Lakritze, Tabak und Teer im Abgang.

Passt zu: am besten zu Braten, Schmorbraten, Wild und mittelalten Käsesorten
