TECHNOLOGIE
Die Weinlese erfolgt im September per Hand, anschließend
folgen das leichte Pressen mit einer kurzen Kaltmazeration
der Beerenhaut und die statische Dekantierung des
Mostes. Die primäre Gärung erfolgt in Stahlbehältern bei
18/19°C mit ausgewählten Hefen. Der junge Wein ruht für
einige Wochen auf dem edlen Bodensatz; die anschließende
Phase besteht in der zweiten Gärung, die 20/25 Tage bei
18° dauert. Nach deren Ende ruht der Schaumwein für
einige Wochen auf dem Bodensatz. Anschließend erfolgen
die Weinsteinstabilität und die Flaschenabfüllung.
Verweilzeit in der Flasche zum endgültigen Ausbau.
ORGANOLEPTISCHE EIGENSCHAFTEN
Perlage: sehr fein und anhaltend.
Farbe: strohgelb mit grünlichem Schimmer.
Bukett: ätherisch, delikat, sehr persönlich durch die

Phase besteht in der zweiten Gärung, die 20/25 Tage bei
18° dauert. Nach deren Ende ruht der Schaumwein für
einige Wochen auf dem Bodensatz. Anschließend erfolgen
die Weinsteinstabilität und die Flaschenabfüllung.
Verweilzeit in der Flasche zum endgültigen Ausbau.
ORGANOLEPTISCHE EIGENSCHAFTEN
Perlage: sehr fein und anhaltend.
Farbe: strohgelb mit grünlichem Schimmer.
Bukett: ätherisch, delikat, sehr persönlich durch die
Synergie der vielfältigen Aromen mit dem Duft
der Hefe; mit entschieden aromatischer Note.
