Die Filliers-Brennerei in der belgischen Stadt Bachte-Maria-Leerne ist eine Familienbrennerei im Zentrum Flanderns, die offiziell im Jahr 1880 gegründet wurde. Die Familie Filliers stellt seit dem 19. Jahrhundert Genever her, den "Vater" des Gins, und so lag die Idee, einen Gin zu produzieren, nahe. Der Dry 28, der seit jeher in Familienbesitz ist, wurde 1928 erfunden und kann als der erste belgische Gin bezeichnet werden. Der Schöpfer des Rezepts ist Firmin Filliers (1888-1965), ein Mitglied der dritten Generation von Brennmeistern. Die 28 im Namen des Gins verweist sowohl auf sein Geburtsjahr 1928 als auch auf die Tatsache, dass er 28 Botanicals enthält: Wacholderbeeren aus Italien, Koriander aus Bulgarien, Lavendelblüten aus Frankreich, Orangenblüten aus Spanien, Gewürze aus Jamaika, Malz aus Frankreich, Bitterwurzel aus Indien, Ingwer aus China, Angelikawurzel aus Belgien, Orangen aus Spanien, Limetten aus Mexiko, Zitronen aus Israel und die Hopfenblüte aus Belgien. Letzterer verleiht dem Gin sein charakteristisches leichtes, bitteres Aroma. Filliers Dry Gin 28 reift vier Monate lang in 300l-Fässern aus französischer Limousin-Eiche, die zuvor Cognac enthielten. Dies verleiht dem Gin süßere und feinere Noten.
