Weißbier (Bière Blanche auf Französisch, Witbier auf Flämisch) ist ein Bierstil, der seinen Ursprung in Belgien hat und heute auf eine mehr als 400-jährige Tradition zurückblicken kann.

Die Hauptmerkmale dieser Biere sind ihre weiche Farbe, ihr schlanker Körper, ihr ausgeprägter Säuregehalt und ihre Würze, die Nase und Mund frische Noten verleiht. Es sind leichte und erfrischende Biere, ideal zum Durstlöschen während der Sommersaison.

Ihre ungewöhnliche Farbe, ein blasses Gelb, das in Richtung Weiß verblasst, rührt von der Verwendung eines hohen Anteils an ungemälztem Weizen her, der während der Trocknungsphase, die notwendigerweise auf das Mälzen folgen würde, keine Farbe angenommen hat. Dieses Rohgetreide enthält intakt seine ursprünglichen zytolytischen und proteolytischen Bestandteile und hat leider keine Enzyme. In großzügigen Mengen verwendet, über 40 % in unserer Fiordalisa, erfordert er während der Maischphase besondere Aufmerksamkeit. Nur die vom Malz bereitgestellten Enzyme müssen die gesamte Arbeit des Abbaus der Reservestoffe aller im Backprozess verwendeten Getreidearten übernehmen, um den Hefen eine Würze mit den Eigenschaften einer ausgewogenen Ernährung zu liefern.

Zu diesem Zweck greifen wir in die Wasserqualität ein, indem wir Salze zur Verfügung stellen, die die Enzyme schützen und in ihrer Wirkung unterstützen, und wir führen einen sehr langen Aufguss durch, um ihnen die nötige Zeit zum Handeln zu geben. Nach einer langsamen Trennung des süßen Mostes von den Brombeeren fügen wir während des Kochens nur eine mäßige Menge edlen Hopfens hinzu, da bei dieser Art von Brassicola der Geschmack und die Düfte des Hopfens nicht ausgeprägt sein dürfen.
Nach dem Abkühlen vergären wir dieses Bier mit einem Hefestamm belgischen Ursprungs, der für diese Art von Bier typisch ist. Dadurch entsteht während der Fermentation all jene Mischung von Düften, die charakteristisch sind und unsere Fiordalisa zu etwas Besonderem machen.

Um die Langlebigkeit des Bieres zu garantieren, wird das Bier traditionsgemäss dank der Zugabe von Zucker und einer neuen Dosierung von Hefe in der Flasche oder im Fass vergoren.

Besonders hellgelb in der Farbe, hat er einen reichlichen und anhaltenden weißen Schaum. Sein Aussehen ist ausgesprochen trüb, was die Verwendung eines hohen Anteils an ungemälztem Weizen unterstreicht.

In der Nase fallen sofort die erfrischenden Noten von Koriander auf, die von breiteren Düften von Orange und Gewürzen unterstützt werden. Das Aroma ist intensiv und fein.

Im Mund ist das Bier leicht, trocken, gut kohlensäurehaltig und mit einem guten Säuregehalt ausgestattet. Mit Stärke bleiben die Nachgeschmacksempfindungen bestehen und fließen in einen angenehmen, frischen und zitrusartigen Nachgeschmack über.
